Doner Blades for Vertical Rotisserie Machines: What Fits and Why
The rotisserie roasts — the slicer cuts
A vertical rotisserie (doner grill, gyros grill, shawarma machine) turns and roasts the cone, but it does not cut anything. The cutting happens with a handheld electric doner slicer — and that is the machine your blade has to match. Searching for a "blade for my rotisserie" therefore starts with a different question: which slicer do you run against it?
Match the blade to the slicer, not the grill
Handheld doner slicers take circular blades from 80 to 140 mm, and the mount in the blade's centre must fit the slicer's shaft:

Cone size and blade choice
The grill still matters indirectly: the bigger the cone your rotisserie carries, the more blade area per pass pays off.
- Small cones (10–25 kg): an 80 or 90 mm blade gives the control needed on a smaller radius.
- Mid-size cones (25–50 kg): 100–120 mm covers more surface per pass without losing control.
- Large cones (50 kg+): 120–140 mm blades keep pace with volume service.
Gas or electric grill — does it change the blade?
No. Whether your vertical rotisserie is gas-fired or electric affects roasting, not cutting. What does affect the blade is the meat itself: heavily marinated chicken shawarma behaves differently from firm beef doner. Replacing a worn blade

Does the rotisserie brand decide which blade I need?
No. The blade mounts on the handheld slicer, so the slicer brand and size decide. Two shops with identical rotisseries may need different blades because they run different slicers.
What blade do I need for a shawarma machine?
Same answer as for doner and gyros: identify your handheld slicer (Dost, Jet, Tandir, Universal-compatible and so on) and its blade diameter, then pick that blade in the edge type your meat needs.
Can I use one blade for doner, gyros and shawarma?
Yes. The blade does not care about the seasoning. Edge choice is about meat texture: serrated for soft, fibrous or heavily marinated cones; smooth for firm cones and clean cut faces.
My rotisserie came without a slicer — what should I buy?
Choose the slicer first based on your cone size and volume, then the blade that matches its mount. An 80–90 mm universal setup covers most small and mid-size operations.
