Installing a 140 mm Bolt-Mount Doner Blade: Step by Step, Safely

Why 140 mm blades mount differently

Smaller doner blades slide onto a shaped shaft — a 140 mm blade bolts directly onto the machine head through 2, 3 or 4 screw holes. That makes the mounting stiffer (necessary at this diameter), but it also means installation is a real procedure: orientation, tightening order and a balance check all matter. Done right it takes five minutes.

Before you start

• Unplug the machine. Not standby — unplugged. A slicer that spins up mid-installation is how serious accidents happen.
• Confirm the hole pattern: your blade's holes must match the head — 2, 3 or 4 holes. Never force or modify a mismatched blade.
• Clean the mounting surface. Meat residue or fat between head and blade causes wobble at speed.

Step by step

1. Remove the old blade. Loosen the bolts gradually in an alternating (cross) pattern, not one at a time to full release — this avoids stressing the last bolt.
2. Check the new blade's orientation. The marked side ("Övre Sida / Upper Side") faces outward, away from the machine head. The bevel of the edge must face the cutting direction — compare with how the old blade sat.
3. Seat the blade flat against the head and insert all bolts finger-tight first. Never tighten one bolt fully while others are loose — the blade cocks sideways and sits skewed.
4. Tighten in a cross/star pattern in two or three passes, increasing force each pass, to the machine manufacturer's specification. Snug and even beats gorilla-tight; overtightening can warp the blade.
5. Spin by hand. With the machine still unplugged, rotate the blade a full turn. It should run true with no wobble and clear the guard evenly all the way round.
6. Test run without meat. Plug in, run briefly, listen. Vibration or a rhythmic noise means: stop, unplug, re-check seating and bolt torque.

When the blade still wobbles

If a correctly mounted new blade wobbles, work through: residue behind the blade, a bolt tightened out of order, a bent washer — and only then suspect the blade. A blade that has been dropped on a hard floor can be subtly warped; do not run it.

Which way around does a 140 mm doner blade go?

Marked side outward, edge bevel facing the cutting direction. If unsure, photograph the old blade before removing it and match the new one to the photo.

How tight should the bolts be?

To the machine manufacturer's spec, tightened evenly in a cross pattern over two or three passes. Even and snug is the goal — overtightening can warp the blade.

The bolt holes do not line up — can I widen them?

No. Drilling unbalances the blade and makes it dangerous at operating speed. The pattern is wrong for your machine; order the matching 2, 3 or 4-hole version instead.

Do I need new bolts when replacing the blade?

Reuse is fine if the bolts are undamaged. Replace any bolt with worn threads, a rounded head or visible stretch — bolts are cheap, blade accidents are not.
