Serrated or smooth in 80 mm?

Both versions are available, and the choice follows the same rules as with the larger blades:

• 80 mm Universal serrated — for marinated, fibrous cones; teeth grip where smooth skates.
• 80 mm Universal smooth — for firm cones, thin slices and the cleanest cut face.

• Small cones (up to ~25 kg): on the small radius, the small blade offers control a big one cannot.
• Compact slicers: lighter machines are built for the smaller blade — "upgrading" bigger is not possible.
